Grilled Halibut with Pinapple Sauce - This halibut recipe is a sweet grilled halibut that tastes great. this recipe takes just 15 to 20 minutes, start to finish.
Ingredients
1 can of pineapple or fresh pineapple cored and chunked.
3/4 c Unsweetened Pinapple Juice
3 tb Lime Juice
1 or 2 cloves of minced garlic, depending on your taste.
2 tb minced cilantro
1 tb minced or flaked rosemary
1 tb cornstarch
2 tb cold water
2 tb To 3 Tb sweetener (sugar, honey or artificial sweetener)
salt & pepper to taste
6 4 oz halibut,steaks or fillets, grilled
Directions: Bake halibut in oven at 400 degrees for 12 minutes. While halibut bakes, Heat pineapple, juices and garlic, bring to boil in medium sauce pan. Reduce heat, uncover pot and simmer for 5 minutes. Stir in cilantro and rosemary. and to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling.Step 2: Mix cornstarch with cold water. Stir into boiling mixture. Boil, stiring constantly, until thickened. Remove from heat; Cool 2-3 minutes. Stir in sweetener. Season to taste with salt and pepper. Pour over halibut before serving. You can also reverse the process and bake the halibut with the sauce poured over the fillets. I like a glass dish for this method.
